✅what you’ll need to have:

  • 51/2 hr: 2minprep, 1hrfridge, 25minchurn, 3minstore, 4hrfreeze
  • 2qt+ mixing bowl (maybe with lid; see direction 2)
  • 1qt; 907g whole milk yogurt (not Greek because that’s too thick and not low-fat because that’s too thin) – I buy a 1qt tub and scrape in the whole thing
  • 1c; 284g maple syrup (if using sweetened yogurt, like in the photo, lower to 3/4c; 213g) – I find this is enough sugar so the froyo will scoop easily but not so much that it’s too sweet
  • 1tbs; 21g unsulphured molasses
  • whisk, preferably French – a fork might work, too – I recommend this (over just using the spoonula) to easily break up potential clumps because I usually encounter them and you want this stuff smoooooth before chilling
  • refrigerator
  • spoonula
  • ice cream maker (prepared as per its instructions, which usually requires freezing 24 hours in advance)
  • freezer and freezer container/s

📄 what you’ll need to do:


  1. whisk all ingredients into mixing bowl until smooth, about one minute
  2. refrigerate for an hour (or up to a week would be fine) – the mixture needs to be cold for best results – any longer (or if you have heavily scented stuff in your fridge) and you should cover it
  3. Follow machine instructions. That likely means freezing canister a day before churning in it and powering it on before filling it.
  4. scrape yogurt base into (as per machine instructions, likely on) ice cream maker
  5. churn 25 min, unless your machine instructs otherwise – should be thick but very soft; you can eat it now, but it’ll quickly melt into more of a drink
  6. scrape into container/s and freeze at least four hours and up to three months
  7. Enjoy it. Be proud of what you’ve done.
