  1. Calculate how much you’ll need for your family each time this gets pulled from the freezer and how often over the next three months you want to eat it
  2. Determine how many times this recipe needs to be multiplied and then jot the adjusted amounts to keep yourself on track and prevent having to do mid-prep math
  3. Do you have more dishes than the one you’ll be baking in now?
    • no – Follow recipe directions, but only put the amount you want to cook now into your dish and cover/refrigerate the bowl of remaining mixture. Clean the dish, then move to FREEZE! step 4.

  4. For each batch to be frozen:
    1. press a sheet of aluminum foil into the freezing(/future cooking) vessel, leaving overhang to be used as handles when pulling the frozen block out later
    2. pour your mixture in and slightly press the top until even
    3. fold over excess foil and freeze until as solid as ice, 2-4hours
    4. use foil overhang to lift out frozen block
    5. use a permanent marker to write on a big enough sheet of foil to completely wrap your frozen pre-cooked casserole, making sure to choose a spot that will stay smooth so your message doesn’t get distorted when you smush the foil:
      • “best by (today plus three months)
      • “corn casserole, (#) servings”
        1. “remove foil and place in greased (identifying description of vessel it froze in)” 
        2. “bake at 350°F ~45min, until browning and bubbly”
        3. “let set 5min before serving”
